We have a great matcha tiramisu recipe for you. The tiramisu is an absolute dream, wonderfully creamy and super delicious.
We used our Inner Sparkle Matcha for the matcha tiramisu. Because it is of such high quality, it is barely bitter. This makes it suitable not only for drinks, but also for sweet dishes.
Unlike classic tiramisu, the matcha tiramisu has a beautiful green color. It's a real eye-catcher that makes everyone want to try some. The recipe is not only vegan, but also gluten-free and free from refined sugar. This makes it suitable for people with intolerances or allergies.

Matcha Tiramisu Recipe - Creamy and Delicious

Ingredients

For the dough layer:

  • 150g oat flour
  • 80g date sugar
  • 200ml soy milk
  • 60g plant-based or regular butter
  • 1 tsp apple cider vinegar
  • 1 tsp baking powder
  • 1 pinch of salt

For the cream:

  • 250g plant-based whipping cream (e.g., from the brand Soyana, available in organic stores. Alternatively, you can use a combination of 100g soy quark, 100g silken tofu, and 30g butter)
  • ½ tsp ground vanilla
  • 1 heaping tsp Inner Sparkle matcha powder + a little extra matcha for topping
  • 2-3 tbsp yacon or maple syrup
  • Raspberries for garnish

Preparation

  1. Preheat the oven to 180°C (356°F) using top and bottom heat.
  2. Place all ingredients for the dough into a bowl and mix everything together.
  3. Line a baking dish (approx. 15x25cm) with parchment paper and pour in the batter. Bake it in the oven for 20 minutes. Let the base cool down. Then, cut the base once horizontally through the middle.
  4. Place the whipped cream, syrup, and vanilla in a bowl and mix until creamy (preferably with an electric mixer).
  5. Add 1 heaping teaspoon of matcha and 150ml of water to a bowl or mixing bowl and whisk everything together in a Z-motion with a whisk.
  6. Place one half of the base into a baking dish and drizzle half of the matcha water over it with a spoon. Once the matcha has been absorbed by the base, you can spread half of the cream on top. Then place the other half of the base on top. Distribute the remaining matcha and then the rest of the cream on top.
  7. Place ½ tsp of matcha powder into a fine sieve and sift the powder over the cream. Then garnish everything with raspberries.
  8. Let the tiramisu chill in the refrigerator for about 2 hours to set, then enjoy.

Frequently Asked Questions

How long does the matcha tiramisu need to set in the fridge?

The finished matcha tiramisu should chill in the refrigerator for about 2 hours. Afterward, you can serve it chilled directly.

How much matcha do you need for the matcha tiramisu?

For the matcha mixture, you will need 1 heaping tsp of matcha powder for every 150 ml of water. Additionally, sprinkle about ½ tsp of matcha over the finished cream as a topping. If you don't have any matcha at home yet, our 10g matcha sachet is perfect.

Can I prepare the matcha tiramisu vegan?

Yes. Use plant-based whipping cream for this or the specified alternative with soy curd, silken tofu, and plant-based butter. Soy milk is used for the base.

Is the matcha tiramisu gluten-free?

The recipe uses oat flour. If the tiramisu needs to be strictly gluten-free, you should use oat flour explicitly labeled as gluten-free, as oats can come into contact with gluten-containing grains during processing and packaging.

How is the matcha tiramisu layered?

First, place half of the baked base into the mold. Spread half of the matcha mixture over it, followed by half of the cream. Then add the second base, the remaining matcha mixture, and the rest of the cream. Finally, garnish the tiramisu with matcha powder and raspberries.
