Matcha Tiramisu Recipe - Creamy and delicious

We have a great matcha tiramisu recipe for you. This tiramisu is an absolute dream, wonderfully creamy and incredibly delicious.
For the matcha tiramisu, we used our Inner Sparkle Matcha. Because it's of such high quality, it has a minimal bitterness. This makes it perfect not only for drinks but also for sweet dishes.
Unlike classic tiramisu, matcha tiramisu has a beautiful green color. It's a real eye-catcher, so everyone will want to try it. The recipe is not only vegan, but also gluten-free and contains no added sugar. This makes it suitable for people with food intolerances or allergies.


Ingredients:
For the dough layer:
• 150g oat flour
• 80g date sugar
• 200ml soy milk
• 60g vegetable or regular butter
• 1 tsp apple cider vinegar
• 1 tsp baking powder
• 1 pinch of salt

For the cream:
• 250g plant-based whipped cream (e.g., from the brand Soyana, available in health food stores. Alternatively, you can use a combination of 100g soy curd, 100g silken tofu, and 30g butter)
• ½ tsp ground vanilla
• 1 heaped tsp Inner Sparkle Matcha powder + some more Matcha for the topping
• 2-3 tbsp yacon or maple syrup
• Raspberries for decoration


Preparation:
1. Preheat the oven to 180 degrees top and bottom heat.
2. Put all the ingredients for the dough into a bowl and mix everything together.
3. Line a baking dish (approx. 15x25cm) with baking paper and fill it with the dough. Bake in the oven for 20 minutes. Let the mixture cool. Then cut the base in half crosswise.
4. Put the whipped cream, syrup and vanilla in a bowl and mix everything until creamy (preferably with a mixer).
5. Put 1 heaped teaspoon of matcha with 150ml of water in a bowl or mixing bowl and mix everything in a Z-motion with the whisk.
6. Place one half of the base in a baking dish and spoon half of the water over it. Once the matcha has absorbed into the base, spread half of the cream over it. Then place the other half of the base on top. Spread the matcha again, then the cream over it.
7. Place ½ teaspoon of matcha powder into a fine sieve and sift it over the cream. Then garnish with raspberries.
8. Let the tiramisu sit in the fridge for about 2 hours and then enjoy.
